Potole r Khosa Bhorta (Parwal skin Bharta or Pointed Gourd’s skin paste or Pâté)

We eat bhorta or paste of many vegetable. I guess it is also a habit born out of frugal living and then passed down to generation as healthy and tasty food. Among all the bhorta that my mother makes, Potole r bhorta is my personal favorite. Here is the recipe!

Ingredients
10 -Potole/Parwal/ Pointed Gourd’s skin
½-teaspoon cumin seed
2-3-cloves garlic, sliced
1-medium onion, thinly sliced
1-greenchili
½-teaspoon chili powder (optional)
1slice -any fried fish or 1-piece boiled chicken (optional if you want to make it non-vegetarian)
2-tablespoon water
Salt to taste

 Method:
1.    Heat oil in a pan
2.    Add cumin seed and fry
3.    Add garlic and onion and fry until onion changes color
4.    Add the Potole/Parwal/ Pointed Gourd’s skin, add chili powder and fry properly
5.    Let it cool
6.    Now in a blender add green chili, fried Potole/Parwal/ Pointed Gourd’s skin, if using then fried fish or boiled chicken and blend well to make paste
7.    You might need to add water
8.    Now in the same pan, heat oil
9.    Add the paste and fry until water is dried
10.  Eat with steam rice
